Newly opened in August and helmed by chef Luca Marinelli, Salon des Refusés – Black Sheep Restaurants’ latest venture, located next to its other recent opening Jean-Pierre – brings the vibrant flavours of southern France and northern Italy to Hong Kong. The team sources fresh, seasonal ingredients daily from Ap Lei Chau’s seafood market, and the menu changes slightly every night to surprise returning diners.

For those unsure where to start, the In Chef Luca’s Hands tasting menu offers a gastronomic journey designed by the chef himself, with the opportunity to watch each dish crafted right before your eyes. Stand-outs include bluefin tuna carpaccio with Calabrian chilli oil, Hokkaido scallops topped with Sicilian pistachios, and pasta alla chitarra with Adriatic baby squid and ‘nduja. A refreshing dessert of strawberry caprese with fresh berries and strawberry sorbet rounds out the experience.
