It’s shaping up to be a bubbly weekend as New World Millennium Hong Kong Hotel is offering a champagne and caviar pairing menu for The Lounge until well into 2026, and Blue Supreme is launching the third iteration of the It’s Alive! wild sour series. In between, Dead Poets is celebrating its second anniversary with a double header featuring takeovers by El Taquero and Raiza Carrera.

New World Millennium Hong Kong Hotel – Bubbles & Pearls

What better way to celebrate the festive season early than with champagne and caviar? Until January 31, 2026, the New World Millennium Hong Kong Hotel is hosting the Bubbles & Pearls pairing menu at The Lounge. Highlights come from the hotel’s centrepiece Vin et Vin collection of grower champagnes, particularly the Diebolt‑Vallois Blanc de Blancs Brut NV and Françoise Bedel L’Âme de la Terre Extra Brut 2008, which was disgorged last year.
For any combo of champagne and caviar from the menu, guests can also opt for a festive canapé set that includes a trio of tuna tartare in a sesame cone, A4 Wagyu beef and an eclair of scrambled egg with Iberian ham.
