Baker and MasterChef Canada winner Chris Siu on his ‘unnatural love for dessert’
Self-taught chef talks about overcoming doubt to open his bakery Daan Go Cake Lab and returning to win the cooking show in its seventh season

For MasterChef Canada season seven winner Chris Siu, opening his second cake shop in Vancouver, Canada, in August, was only one task on his to-do list.
The founder of Daan Go Cake Lab also made desserts for a dinner collaboration with two other chefs, attended a festival in Vancouver’s Chinatown – where he sold a White Rabbit Creamy Candy-flavoured dessert – and demonstrated how to make Hong Kong-style milk tea.
Daan Go Cake Lab, which Siu first opened on the other side of the country, in Scarborough, Ontario, in 2017, now has six locations in Canada.

Siu’s bakeries specialise in Asian-inspired cakes. One of the signatures is a chocolate cup filled with coffee jelly and caramelised pears, decorated like a mini ramen bowl. There are also cakes featuring durian mousse, pandan with mango compote and even one shaped like a roast pig, complete with red cherries for eyes.

“I think, flavourwise, the one thing that’s true about dessert is that it’s really hard to mess up something that’s sweet,” Siu says at his newest cake shop. “Because sugar is such a palatable flavour for people, you can do really weird twists on flavours, and usually they will be acceptable to their palates.”
