Hairy crab season is here, and while you can enjoy the seasonal delicacy at home, restaurants are coming up with all sorts of exciting dishes that feature the crab and its illustrious fat.

This year, Hong Kong chefs have pulled out all the stops with classic and regional Chinese dishes and even hairy crab pasta and pizza. Read on to see which of the following take your fancy.

For crab connoisseurs, the limited-time hairy crab special menu (HK$980) at Ah Yung, available until December 19, is an essential seasonal experience.

The star is a whole six-tael (225-gram) Jiangsu hairy crab, the likes of which are celebrated for their rich roe and sweet meat.

Courses highlight the prized ingredient in dishes such as crispy fish maw with golden crab roe, and fragrant fried rice with crabmeat and conpoy.
