Hotel chef’s go-to Hong Kong restaurants for Italian fine dining, French, Indian and more

Genoa native Fabio Mariella shares his favourite restaurants for top Italian dishes, French chicken, dim sum, Peking duck and Indian

Fabio Mariella, a native of Genoa in Italy, is the executive chef at the Holiday Inn Golden Mile hotel in Hong Kong. He spoke to Andrew Sun.

I was born in Genoa but both my parents are from the south of Italy. My mom always cooks at home and I always watch her.

My dad is also a chef, so I learned a lot from both of them. They both worked, but on Sundays they always made simple things like pasta with a meat sauce like bolognese. This is where my passion for food comes from.

I like traditional Hong Kong foods, so I really enjoy claypot rice. Tai Wing Wah (2/F, 2-6 On Ning Road, Yuen Long. Tel: 2476 9888) is a place my wife always takes me to in the New Territories. It’s very authentic and set in a little village. It’s simple but good. My favourite topping is chicken, mushroom and Chinese sausage. It also serves very nice dim sum.

Another good choice for dim sum is Dragon Palace (various locations including Shop 201-204, Hang King Shopping Arcade, 9 Wing Fong Road, Kwai Fong. Tel: 2429 2277). Kwai Fong is where my wife’s family lives, so we go to this branch. It still has servers using the old carts to bring out food.

It’s not Cantonese but I also love Peking duck at Peking Garden (Shop B1, Alexandra House, Central. Tel: 2526 6456).

In Tsim Sha Tsui, I usually just eat in the hotel, but there are a lot of good Indian restaurants around too. Sometimes I eat on the street, other times I go to Gaylord (5/F, Prince Tower, 12A Peking Road, Tsim Sha Tsui. Tel: 2376 1001) for lunch.
