Noodles seem to be the emerging theme of April’s new restaurant openings, as four new specialist eateries join the fray, including one of Tokyo’s top three ramen shops and a plant-based ramen hideaway.
Causeway Bay debuts a Thai street-style eatery and a Japanese-Italian newcomer.
Hollywood Road in Sheung Wan welcomes a fresh Spanish hang-out while, across the harbour, Tseung Kwan O gets a taste of a classic hotel’s famed pastries. In Kowloon, Jordan welcomes a Michelin-recommended addition from Phuket.

1. Ramenya Shima

Tokyo’s celebrated Ramenya Shima, one of Japan’s restaurant ranking platform Tabelog’s top three ramen destinations, opens its first international outpost in Hong Kong.
Located at Sugar+ in Causeway Bay, the outlet brings chef-proprietor Hiroshi Morishima’s artisanal tanrei-style ramen to the city. The style is known for its clear, light and delicate yet deeply umami broth. Renowned for its refined taste, it is often paired with noodles selected to match the broth. It is seen as a refreshing alternative to heavy, creamy or milky tonkotsu (pork bone broth) ramen. The menu at the new Hong Kong outpost features signature shoyu ramen alongside exclusive small plates.

2. Fine Foods Lounge

The new Fine Foods Lounge at The Royal Garden Kowloon East hotel in Tseung Kwan O brings the delicacies of the Tsim Sha Tsui original to the east. Drawing inspiration from the hotel’s signature offerings, the lounge showcases its artisanal pastries, including buttery palmiers that have long been a guest favourite.

3. Uuro
A casual Japanese-Italian eatery has opened its doors in Causeway Bay, with a diverse menu of burgers, steaks, pizzas and pastas. The bagel fillings include Japanese wasabi egg salad, smoked ham and thick butter, and caramelised onion with bacon and mashed potato. These are frequently sold out before dinner service.

4. Ning Kee
A Michelin-recommended Phuket favourite has arrived in Hong Kong. Ning Kee, renowned for its authentic southern Thai flavours, brings its heritage recipes to Jordan. Signatures include the braised pork knuckle rice, simmered until fall-apart tender and served with fragrant rice, alongside the rich, coconut-infused khao soi noodles, a comforting bowl of egg noodles in creamy curry broth.

5. Happy Samurai

A ramen shop steeped in history has arrived in Central. Happy Samurai, tucked behind the market stalls on Wellington Street, brings 60 years of Japanese craft to Hong Kong. Operated by a fourth-generation family-owned factory outside Sapporo, the intimate spot serves bowls built on a proprietary plant-based broth perfected over decades. Beyond ramen, the menu features donburi, steamed buns and katsu curries.

6. Kumo Soba

Kumo, meaning cloud in Japanese, debuts with a tori paitan (rich chicken broth) ramen from Japanese ramen brand, Takano, a Michelin Bib Gourmand regular from Tokyo. Tori paitan is a rich, creamy and opaque Japanese ramen broth made by boiling chicken bones, meat and cartilage for hours. The signature bowl features a silky, eight-hour broth made from Niigata and Hakata chicken, whipped into a delicate foam and served with buckwheat-infused aged noodles.

7. Oooo Waffle

Taipei eatery Huinyeou is bringing its Korean-style waffles to Hong Kong’s Gough Street. The venture is the Taiwanese brand’s first overseas branch, and operates under the new Oooo Waffle name.
Known for a staggering 100-plus flavours and selling more than 1,500 waffles daily, the shop combines Taiwanese hospitality with Korean-inspired recipes. The Hong Kong menu will feature the brand’s bestselling night market fried chicken basil waffle, as well as the Oolong Riviera and the pistachio courtier waffle.

8. Lola Maria
This month, Hollywood Road welcomes Lola Maria, a vibrant Spanish restaurant from chef Edgard Sanuy Barahona, previously of Pica Pica and Aire. The sharing-focused menu features classics such as gambas al ajillo (garlic prawns) and Spanish omelette with chistorra (pork sausage), and playful creations like a foie gras Negroni lollipop. Wash it all down with Spanish wines, house sangria and modern cocktails.

9. Soi Thong
A vibrant Thai street-style eatery, Soi Thong, has arrived in Causeway Bay. Dishes include Northern Thai curry noodles with A4 Wagyu, Northern Thai-style boat noodles simmered for six hours, and tender braised pork knuckle rice. Stand-out appetisers include a refreshing satay sauce made without peanut butter and hand-pounded shrimp cakes layered with cuttlefish and dried shrimp.

10. Bistrot du Vin

Beloved French outlet Bistrot du Vin has relocated to Sai Ying Pun, taking over the former space of Batard at The Fine Wine Experience on Connaught Road West. Now integrated with one of Hong Kong’s most extensive wine collections, with the same deal as Batard, guests can select from more than 1,200 labels at retail prices. Chef Guillaume Losguardi presents a revamped menu of rustic, wine-friendly classics, including house-made pâté en croûte and baked marble goby.

Sushiyoshi

Two-Michelin-star Sushiyoshi has debuted a new branch at MGM Cotai in Macau, marking the legendary Osaka restaurant’s latest international outpost. Led by chef-owner Hiroki Nakanoue, renowned for his creative sushi, the omakase-only venue blends traditional Edomae craftsmanship with modern flair. The serene space features high ceilings, hinoki wood and contemporary art. A spring menu showcases dishes like mackerel toast, and caviar and sea urchin sashimi, alongside seasonal nigiri.
