New openings in Hong Kong, from Yume’s cocktails to Kai Fuk Lau’s contemporary Chinese

Led by British-trained chiropractor Ronan Chan, Ethica offers an alternative to quick-fix pain relief. The clinic addresses root causes through personalised, hands-on chiropractic treatment and emphasises education, emotional support and long-term balance, helped along by their yoga workshop.

Taking over the basement once home to Drop and Quality Goods Club, Yume is a Japanese-inspired cocktail lounge and the latest to join Central’s nightlife roster. Its debut cocktail menu, Dream is Destiny, features an interactive origami “fortune-teller” that introduces guests to a range of in-house tipples such as It Was All a Dream, which combines dark rum, rye whisky, coconut and pineapple. Bar bites range from tuna tartare with Oscietra caviar to Iberico pork katsu sandos and Wagyu beef sliders.

This new kappou restaurant presents itself as an entry point to the higher echelons of Japanese fine dining with its intimate, 10-seat counter and open kitchen. The menu shifts with the seasons every four months, but guests can expect signature dishes such as uni and shiso tempura roll along with a hand-picked selection of sake.
