New openings in Hong Kong, from Mius bar to the revamped Duddell’s

Bartender Shelley Tai has returned to her home turf after a four-year stint in Singapore to open Mius, a sleek Gough Street hotspot focused on elegant cocktails and elevated bar food. Queues form quickly, so arriving early is advised, the rewards being signature drinks such as the Gin & Apple and Guava Oolong Float.

After a month-long transformation, one-Michelin-starred Duddell’s has reopened with reimagined interiors by André Fu Studio. Still spanning two floors, the main dining room remains focused on refined Cantonese cuisine while the Upper Room offers a casual, all-day social setting serving dim sum, weekend brunches and cocktails inspired by Ba Gua, the ancient feng shui map of life’s energies.

Next door to Bridges Street’s new French haunt Jean-Pierre, the contemporary Mediterranean restaurant Salon des Refusés is now open for service, with seafood-forward plates inspired by the sunny climes of southern France and northern Italy, inflected with Japanese techniques by chef Luca Marinelli. Catch of the day comes in each morning from the Ap Lei Chau seafood market, stocking a menu of dishes such as iwashi on toast, Hokkaido uni brioche and squid “alla Chitarra”.
